Brisket. Few names have the power to make you palpitate, salivate or ask what is that? Sounds easy, for example, our style is based on a mix of salt, pepper, and Woodsmoke. But easy doesn’t always mean SIMPLE. There are a thousand ways to cook it, but each involves insider knowledge and techniques that our team has worked on.

Smoke

The ability of smoke to coat and penetrate almost anything and persist there for a while is almost magical. Magical too is smoke´s value to BBQ as an ancient tool for preserving food (besides its drying qualities, it imparts antimicrobials and antioxidants to the meat that prevents decomposing; this method has been used for thousands of years) and its ability to make things taste Good. How something so delicate in the matter has such a powerful impact on everything it encounters?

Fire

Fire is always evolving. So while it’s good to take stock of it at any given moment, you also have to look at where it’s heading. Think of it as a game of chess. Your rival is inconsistent temperature. Your pieces are your logs and your shovel. The board is the fire itself. You study the board, think about where you want to get, consider what the opposition is likely to do, and then plot your moves.

Principles of smoking meat

The art of long-smoking meat is about cooking it to an extreme form of tenderness while capturing smoke for flavor. At the same time, we want to generate a flavorful crust or “bark” which results in regulating the Surface temperature and texture of the meat to facilitate smoke adhesion.
